A gas oven that takes an age to catch
A hot surface igniter keeps glowing long after it has stopped pulling the current needed to open the safety valve. Brightness tells you nothing; amperage tells you everything. It is the single most misread problem on a gas range.
One side browning, the other pale
The convection fan or its motor, an oven sensor that has wandered, or a hinge letting the door stand a few millimeters open. We calibrate against our own probe at rack height rather than believing the panel.
A burner still clicking after it lights
Spillover or damp has bridged the spark electrode. Cleaning and drying the assembly settles most of them; a cracked ceramic insulator accounts for the rest.
An electric element gone cold
On a radiant top: the element, the infinite switch behind the knob, or the board on touch models. On a coil range it is nearly always the terminal block, which burns where the coil plugs in.
Door locked shut after self clean
A thermal limit has opened, the lock motor has jammed, or the board never saw the cavity come back down to a safe temperature. Book it rather than forcing it, because that mechanism bends and then never seals again.
An induction top erroring and cutting out
The generator underneath sheds its heat through fans, and a blocked intake trips protection long before the coil is in any danger. Airflow and the generator sensor come first, before anyone prices a board.

Do you work on professional gas ranges?
Yes, and on the island and through Palm Beach they are a large share of the week. Wolf, Viking, Thermador, DCS, Bertazzoni and La Cornue are all regular work. These ranges were designed to be serviced: burners, igniters and valves are all replaceable, so a thirty year old professional range is normally a repair rather than a write off.
My oven sits about 25 degrees low. Fixable?
In most cases yes, and often with no parts at all. Nearly every oven built in the last twenty years carries a calibration offset in its control menu. If the offset will not hold, the oven sensor has drifted and is an inexpensive replacement. We verify with an independent probe before and after, so you are not taking anyone word for it.
There is a faint gas smell. Can I keep cooking?
No. Switch the appliance off, open a window and call the gas utility if the smell is strong. Once the line has been made safe we test every joint with electronic detection and soap solution, and we do not leave a gas appliance in service until each connection reads clean.
